Aunt Marianne’s Mandarin Orange & Tortellini Fruit Salad

dressing:

1/2 cup poppyseed dressing

salad:

1 9-oz package of Three Cheese Tortellini pasta

1 cup fresh blueberries

1 cup fresh strawberries, sliced

1 11-oz can Mandarin Orange segments, drained

3/4 cup green grapes, sliced in half

1/4 cup sliced almonds


Cook Tortellini pasta according to directions on package; drain.  In a large bowl, add pasta and salad ingredients.  Pour dressing over salad and toss lightly.  Refrigerate until ready to serve.  Yields 6 (1 cup) servings.  This is my favorite recipe; it’s so fresh and delicious!  It’s great for any occasion, from a picnic to a summer cookout.  Add your own flavor by adding your favorite fruit! 

Grandma Gladys’ Mandarin Orange Cake

cake:

1 package Duncan Hines cake mix

1 can (small) Mandarin Oranges with juice

2/3 cup oil

3 eggs

toppings:

1 20-oz can crushed pineapple, undrained

1 package (small) instant vanilla pudding

1 8-oz Cool Whip


Preheat the oven to 350 degrees.  Beat all cake ingredients together for three minutes.  Bake in three-layer pan or 9 x 13 pan, greased and floured.  Bake for 20-25 minutes.


Mix pineapple with pudding.  After well dissolved, add Cool Whip.    Fold together and spread over cooled cake.  Refrigerate for a few hours before serving.  Enjoy! :]
