Food: Almonds are primarily used in cooking and baking. Almonds are used in almond milk, almond oil, and the actual almond fruit itself can be eaten. When the seed of an almond is eaten, it is usually roasted or toasted. **Note that excessive consumption of almonds is unhealthy. Almonds produce a poison called hydrogen cyanide, which actually gives them their flavor. In small amounts it can be considered helpful, but if consumed in excess can cause respiratory failure or even death.
You can use almonds in just about anything.
A common almond dessert is almond cookie hearts. The
recipe for which is as follows:
Ingredients
1 cup (2 sticks) butter or margarine
1 cup sugar
1 egg
2 cups flour
2 tsp. baking powder
1 tsp. vanilla
1 cup whole natural (unblanched) almonds
Sliced or slivered almonds, red hots or M&Ms, or red sprinkles
for decorating
Directions
Preheat oven to 375°F. Cream butter with
sugar, blending until light and fluffy. Beat
in egg, flour, baking powder and vanilla.
Grind almonds stop-and-go fashion in electric blender or use
food processor. Divide dough in halves.
Roll dough out on a floured surface until 1/8 inch thick.
Cut into hearts (or other shapes as desired).
Decorate by pressing almonds or candies gently into
dough, or shaking on sprinkles. Place on
ungreased cookie sheet and bake 7 to 8 minutes, just until edges
start to turn golden. Makes 4 to 5 dozen
cookies, depending on size.
